I Made It: Orzo Salad with Chicken Meatballs (From Good Housekeeping)

Healthy Orzo Salad and Chicken Meatball recipe via Hurray Kimmay blog

So fresh and so yum, yum!

A few months ago, recently after my wedding, my Mom told me she got me a subscription to Good Housekeeping magazine. In past years, I would have said, “Mom. I’m not an old lady! Why are you giving me old lady magazines?” But alas, at only 28, it seems I enjoy these old lady magazines. I just skip over the “How to talk to your teenager about sex”  articles (although I’m sure that will come in handy one day) and the “Sex after 40” articles (although I’m sure that will also come in handy some day). What I really love: the recipes. Most old lady magazines are full of healthy, low calorie, low fat, recipes. I mean, old ladies really have to start watching what they eat, you know?

Dr. Oz graced the latest Good Housekeeping magazine. He wooed the old ladies with his salad tossing, handsome blue sweater, and his cry of “Eat your way slim!” But he won me over with his smart and healthy cooking. Damn you, Dr. Oz! It was also the blue sweater, I can’t lie. But no worries, my marriage is safe. I just dabbled with the healthy recipes inside. Here’s my first try: Orzo Salad with Chicken Meatballs. Sounds pretty good! Keep reading for this healthy recipe from Good Housekeeping, my notes, my photos,  and my final verdict on the recipe. Hurray! Continue reading
